Gluten Free Banana Nut Bread

This Gluten Free Banana Nut Bread is a long time family favorite. Make it gluten free by using gluten free flour, or use regular flour. This recipe works wonderfully either way!

Several years ago, before I was gluten free, I shared one of my favorite recipes… Banana Nut Bread. It’s always been one of my very favorites, for multiple reasons, but it wasn’t until a few months ago that I tried using the same family favorite recipe, just with gluten free flour.

I’ll be honest, I didn’t have very high hopes that it would turn out. It seems often that even though gluten free flour says it can be used cup for cup, there’s something that doesn’t quite translate the same. Be it a taste issue or a change in texture, cup for cup normally isn’t my favorite way to convert regular recipes into a gluten free version.

But… I really missed my favorite banana nut bread recipe and was ready to see what came from a change in the flour… disappointment, or not.

The results blew me away. I was left with a delicious gluten free banana nut bread that tasted exactly like I remembered it. The texture was great and so was the flavor. I really was blown away… and suddenly frustrated with myself that I hadn’t tried to do this earlier. I’d been missing out on it for years, always wishing I could bake up a loaf of this yummy bread!

I give all the credit to my favorite gluten free flour blend, made by Namaste. I love their scone mix (I seriously haven’t found anything better) and the flour blend is fantastic too! 

Since trying the blend in this banana nut bread recipe, I’ve been experimenting with other family favorite recipes as well and the results have been just as great. Happy days for sure!

Gluten Free Banana Nut Bread

Gluten Free Banana Nut Bread

Shayna Queen
Delicious gluten free banana nut bread created from our family favorite recipe! Make it gluten free, or use all purpose flour. Either way, the results are wonderful!
Course Breakfast, Snack
Servings 1 Loaf

Equipment

  • Electric Mixer
  • Mixing Bowl
  • Measuring Cups
  • Measuring Spoons
  • Cutting Board
  • Chopping Knife
  • Loaf Pan

Ingredients
  

  • 2 cups Gluten Free Flour Blend, Namaste Brand Or, all purpose flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 cup Butter Softened
  • 1 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • 3-4 Ripe Bananas Mashed
  • 1/2 cup Chopped Walnuts
  • 1/2 cup Chopped Pecans

Optional Add In's:

  • 3/4 cup Chocolate Chips Semi-Sweet

Instructions
 

  • Preheat oven to 325 degrees.
  • In a separate bowl, measure and sift together the flour, baking soda and salt.
  • With an electric mixer, cream together the butter and sugar until soft and fluffy.
  • Add the eggs and vanilla and beat until well combined.
  • Add the mashed bananas and beat until well combined.
  • Add the flour mixture and mix well.
  • Add the chopped nuts and beat until well combined.
  • Place in a well greased loaf pan.
  • Bake at 325 degrees for 60 to 70 minutes, or until a toothpick insert comes out clean.
  • Allow loaf to cool slightly before transferring to a wire rack.

I’m sure your cookbook will look great and will have great recipes as well! 🙂 there is nothing better than a ‘grandma’s’ old recipe & yes adding chocolate chips is a great idea! 🙂

  2. Looks yummy, Shayna. What a great tribute and memories to pass down from your Grandmother. Banana bread is one of my favorites, and my staff sometimes bakes that for me for my birthday. I’d much rather have that than cake! Have fun with the book.

  4. Recipe sounds easy and good and the pictures are wonderful. However, as I scroll down on the right side is a flashing animated ad that says to never eat bananas! Do you have control over those ads? That’s what I call irony.

      1. Well, Shayna, I’ve decided to live dangerously and ignore that ad. I’m looking forward to making your Grandma’s Banana Nut Bread. I’ve been cooking and sewing for 60 years but I’m not much of a baker. When I was 7 yrs old, I would stand on a kitchen stool to reach the cooktop. My widowed Mother was an RN. I cooked up a storm every time she left the house, right after she would beg me not to cook! I’ll let you know how much I love it. . .

  6. I just saw your post about making a family cookbook. I had the same idea the other day as a gift to put together for my daughter graduating from college this year, and then the other 5 grandkids as they get older — my mother loved to cook and my siblings and I have so many of her recipes. Do you have an online book company you were going to use for the cookbook? I have scanned and made a “scrapbook” of a vacation using the Apple photo albums, but none of them are really geared for a lot of script (i.e. the recipes).

    And also, I have some of those same plates from my grandmother’s house! When she passed away my aunts asked what I wanted and as I lived many states away I asked for just a few samples of her blue plates. My aunt thought it was funny — she said she thought some of the plates came from the grocery store (where you saved stamps to get them)? I absolutely love looking at them.

    1. Great minds think alike, Kathy! We are going to use blurb to publish the book, but my cousin is a pro with computers so he is building it with one of his programs.
      And yes, I believe my grandma collected the plates from stamps at the grocery store. I know she worked really hard to grow her collection, so I cherish them! 🙂

  7. Thanks for sharing this recipe! I made a loaf this week, and it is wonderful! (in fact, I may have had it for breakfast *and* lunch yesterday ….) I ended up having to bump my oven temp up to 350, and bake it a little longer, but it was sooooo delicious!
