I don’t generally share a lot of recipes, but I do like to share recipes that warm my heart. And these perfect fluffy pancakes are one of those recipes.
Growing up, my mom stayed at home with my brother and I. She had breakfast ready and on the table every morning. I have so many amazing memories from those wonderful mornings. And I always looked forward to her pancakes.
Now whenever I make them, I’m brought back to my school days. Those memories are pure gold. Sometimes there’s nothing better than sitting around the table sharing a pancake and great conversation. It’s a fabulous way to start the day… and my mom knows that anytime she wants a good morning conversation, all she needs to do is make her pancakes… They’re moist, fluffy and delicious… The best kind of pancake!
- 1 cup flour
- 2 tsp. baking powder
- ½ tsp. salt
- 2 tbs. sugar
- 1 egg
- 1 cup milk
- 1 tbs. melted butter
- Mix flour, baking powder, salt and sugar. Add egg, milk and butter. Mix together. Batter will be a bit lumpy. Drop on hot griddle and cook until top side becomes "bubbly", about 1 minute. Flip over and cook another minute or two. Serve with butter and syrup!
- To make them extra special, drop a few blueberries or chocolate chips onto each pancake once they're on the griddle. Yummy!

P.S. Another one of my favorite ways to eat them, is to pour on a spoonful of cream, press it into the pancake, then sprinkle on a bit of sugar. Oh. My.!
