Perfect Fluffy Pancakes

A family favorite recipe, I’m sharing the delicious pancakes my mom has made since I was a little girl. They are the perfect breakfast staple.

I don’t generally share a lot of recipes, but I do like to share recipes that warm my heart. And these perfect fluffy pancakes are one of those recipes.

Growing up, my mom stayed at home with my brother and I. She had breakfast ready and on the table every morning. I have so many amazing memories from those wonderful mornings. And I always looked forward to her pancakes.

Now whenever I make them, I’m brought back to my school days. Those memories are pure gold. Sometimes there’s nothing better than sitting around the table sharing a pancake and great conversation. It’s a fabulous way to start the day… and my mom knows that anytime she wants a good morning conversation, all she needs to do is make her pancakes… They’re moist, fluffy and delicious… The best kind of pancake!

These pancakes are incredibly easy to make, and if you’re hungry for more than they make, just double the batch. They also freeze and reheat really well!

I do recommend using fresh baking powder. If your baking powder is old, they don’t turn out nearly as fluffy.

This is also the perfect base recipe, so if you love your pancakes with blueberries, chocolate chips or any other mix in’s, add them into the batter, or sprinkle the topping on the pancakes before flipping them on the griddle. Yum!

I love to layer them with butter and syrup, but they’re also delicious with a spoonful of cream pressed into the top, and then a sprinkle of sugar. Oh. My. My mom would often do that for us and I still crave it!

Perfect Fluffy Pancakes

These delicious pancakes are a family favorite!
Course Breakfast

Equipment

  • Mixing Bowl
  • Measuring Cups
  • Measuring Spoons
  • Whisk
  • Griddle
  • Spatula

Ingredients
  

  • 1 cup Flour All Purpose
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 tbsp Sugar
  • 1 Egg
  • 1 cup Milk
  • 1 tbsp Melted Butter

Instructions
 

  • In a large bowl, mix the flour, baking powder, salt and sugar.
  • Add egg, milk and butter. Mix together well with a whisk. There will be lumps in the mixture.
  • Drop onto hot griddle. When small bubbles start forming on pancakes, use a spatula to flip them.
  • Pancakes are done when you press on the top and they don't indent.

  1. I want pancakes now! These look delicious, and so easy to make, they’re the perfect recipe for me! I’m a really good cook, but can’t bake to save my life, and so anything that includes flour makes my palms sweat :/

  4. Pancakes are a wonderful memory for me as well with my Grandma. Before school, my brother and I would ride our bikes or hoof it across the crick to a made-with-love breakfast waiting for us ready and hot. Along with other delicious breakfast items, pancakes were always a huge hit. Gonna give these cakes a try, they look out-of-this-world.

  8. i just made these this morning for my family! my dad would always make us pancakes growing up so i often crave them now days especially on the weekends… I would say I make 4-5 hot breakfasts for my family per week… we can’t eat lavishly every morning cmon now! but they were delicious and fluffy and I will def be making these again! I would like to try substituting the flour for almond flour next time for a healthy take and maybe sugar for stevia and butter for coconut oil 🙂 thanks for the classic though some mornings you just need a good comforting all american pancake!

  12. this is the best pancake recipe ever. it makes a small batch of absolutely delicious and fluffy pancakes that use simple ingredients we already have in our pantry. I have made pancakes using this recipe about 4 times now and they are ready in under 15 minutes. amazing!
