Gluten Free Toffee Blondie Bars

These gluten free toffee blondie bars are absolutely delicious! Don’t need them to be gluten free? Just use regular flour instead.

A few weeks ago I was craving one of my favorite sweet treats, these gluten free toffee blondie bars. They’re one of my very favorite cookie bars and they never last very long because they’re so delicious.

I like to think of them as a thick, chewy version of my favorite chocolate chip cookie, but with a twist. A delicious twist. The toffee part of these blondie bars brings them to the next level. If you love toffee, you’ll love these!

Gluten Free Toffee Blondie Bars

I made these bars all the time before going gluten free (almost 10 years ago now!), so don’t be scared away from this recipe if you don’t need them to be gluten free. Just use regular flour instead and keep everything else the same.

After going gluten free, I honestly missed these bars. I would pass them in my recipe box looking for other recipes and always wish I could make a big batch. I was hesitant to try and convert them over to gluten free for fear of being disappointed with the outcome. Turns out, this recipe works beautifully with gluten free flour.

I’ve made them with several different variations of gluten free flour and they’ve been great each time. I will say though, that the grittiness level of the bars completely depends on which flour blend you choose to use. For these specific bars, I used this Namaste gluten free flour blend and it worked beautifully.

The key to these bars, is not to over bake them. That can sometimes be tricky with gluten free baking, but use a toothpick to check the center. The edges should be golden brown, but the top will be shiny.

Our sweet Ania loved these too. She’s a good eater and it makes my heart happy that she already knows homemade goodies. She also loves to sit at my feet while I bake or cook and she just takes it all in.

Of course, she loves to be a taste tester too…

Gluten Free Toffee Blondie Bars

Equipment

  • 9×13 Baking pan
  • Aluminum Foil
  • Measuring Cups
  • Measuring Spoons
  • Mixing Bowls
  • Electric Mixer
  • Spatula

Ingredients
  

  • 1 cup Unsalted Butter Plus extra for the pan
  • 1 3/4 cups Brown Sugar
  • 2 Eggs
  • 2 1/2 tsp Vanilla Extract
  • 2 cups Gluten Free Flour
  • 1/2 tsp Salt
  • 1 Cup Toffee Bits I use the Heath brand
  • 1 12 oz package Semi-Sweet Chocolate Chips

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 9 x 13 baking pan with aluminum foil, pressing the foil into the edges of the pan with extra overhanging on the handles.
  • Lightly butter the foil.
  • In a glass dish, use a microwave to melt the butter.
  • In a large bowl with an electric mixer, beat the melted butter with the brown sugar for about a minute.
  • Add the eggs and vanilla and beat until well combined and light in color.
  • Add the gluten free flour and salt and beat until just combined.
  • Fold in the toffee bits and chocolate chips.
  • Pour the batter into the pan.
  • Bake for 25 minutes, checking often towards the end of baking time. The blondies will be golden brown on the edges, yet still soft in the middle. Use a toothpick to check the center, but don't over bake!
  • Allow the pan to cool completely, then lift the foil edges out of the pan.
  • Cut into squares and enjoy!
